salsa chicken

I LOVE this recipe for summer dinners. It’s easy to put together and doesn’t require a pile of pans or lots of time over a hot stove during muggy weather.

2 roma tomatoes, diced

1/2 onion, diced

1/3 to 1/2 jalapeno pepper, diced

corn, beans, fruit, or other add ins to taste

1 to 2 cups chicken breast (one package of pre-cooked original spiced chicken breast strips from aldi’s makes 3 servings for us)

cheese for garnish

white or brown rice

in a saute pan, add salsa (peppers, onions, etc) and chicken. saute until chicken is heated through (if using raw, cook chicken to just pink, add salsa, cook until chicken is fully cooked). serve over rice with cheese.

i’ve made this with bottled salsa before, but i much prefer it with a fresh chopped salsa.
