Empty Your Jars: Oatmeal Muffins


I suppose whether or not these are healthy are a matter of opinion. The original recipe called for buttermilk but I had sour cream in the fridge left over from chili night, and I swapped out the oil for fruit butter. The original definitely is more virtuous than mine.

This recipe did empty two of my jars, so it’s pretty true to title.

Original recipe here- Healthy Apple Oatmeal Muffins

1 1/4 cup oats

1 1/4 cup flour

1/2 cup brown sugar

1 cup applesauce (I used a jar of red hots apple sauce)

2 heaping tablespoons fruit butter (I used spiked apple butter)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 tablespoon cinnamon

1/2 cup sour cream (or buttermilk)

optional: 1 cup of mix ins such as nuts, raisins, apples, or other fruit

1 egg

1 tea vanilla

In a smaller dish mix apple sauce, sour cream, egg, vanilla, apple butter, and sugar.

In another bowl, mix flour, oats, salt, baking soda, baking powder, and cinnamon.

Add wet bowl to dry and mix until just combined. Fold in mix-ins, if using

Fill lined muffin tins and bake at 350 for 20-25 minutes
