Chocolate Olive Oil Loaf (31 Days of Baking)


This is a lovely, dark chocolate loaf cake that’s beautiful with a cup of coffee or with vanilla bean ice cream. Modified from a recipe from The Baking Bird, the loaf can be made slightly less intense with a lighter cocoa.

Yes, the loaf comes out just that black.

Chocolate Loaf Cake

1 cup buttermilk

1/2 cup olive oil

1 cup white sugar

1 1/2 cup flour

1 egg

1 tea vanilla

1 tea blackstrap molasses

1 cup dark chocolate baking cocoa

1/2 tea baking soda

1/4 tea salt

Preheat oven to 350. Line a loaf pan with parchment paper, or grease well.

In a mixer bowl, add flour, cocoa, salt, and soda. Mix well, then add sugar, molasses, vanilla, egg, milk, and oil. Mix until well blended, but be careful not to over-beat.

Bake for 55-60 minutes. Let cool in pan for 10-15 minutes then finish cooling out of the pan.
