Pudding cookies are so soft and squishy! These are very rich cookies, make them on the small side. They do come out looking more the ‘cookies’, I mean, what people think cookies look like when you say the word cookies. I know that sounds odd but I saw another blogger say that, and it actually makes sense now that I’ve made them.
- 2 cups all-purpose flour
- 1 package instant pudding mix, chocolate or vanilla
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 sticks butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1/2 cup baking cocoa
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 bag chocolate chips
Cream butter and sugars, then add pudding mix and vanilla. Add dry ingredients and mix well. Add in chocolate chips.
In a oven preheated to 350, bake for 11 minutes. I rolled the cookies into smallish balls, they didn’t spread.
I had to take Mid to the doctor (just a physical for his driver’s license) but I didn’t get a chance to do the features for this week. Next week will have double!
