In our house, woo-woo, or woo, refers to any sort of weirdness that comes out of our lives.

There’s a lot of woo-woo in our lives. Honestly, I have friends that expect stuff to go weird in my presence. It’s just a fact in our relationship.

A lot of my woo-woo involves cooking.

These cookie pies were woo-woo.

I found a box of maple brown sugar cake mix at Target, and after weighing the price of the mix against what I would need to scratch bake a similar cake, took the box home. I knew I wanted to make a pumpkin spiced cookie pie.

It turns out that Mid’s friends were pressuring him into finding Whoopie Pies. And it scared them to walk in on a plate of homemade pies, just hanging out.

That’s me. I’m magic.

Easy Spiced Cookie Pies

1 box spiced cake mix [maple brown sugar, spiced, gingerbread, etc]

1/2 table pumpkin spice

2 tea vanilla

2 eggs

1/3 cup oil

milk

Small amount of cream cheese frosting, your favorite, at room temperature

 

Preheat oven to 350

Mix everything through the milk together. You want a stiff dough, but if it’s too stiff to incorporate, add a small amount of milk until the dough is wet enough to mix.

Place small balls of dough on a cookie sheet. These won’t spread that much, so make the balls roughly the size of the pies you want. Aim for an even amount of cookies.

Bake 8-10 minutes or until set.

Remove from oven, cool completely.

With the back of a small spoon, apply a small amount of frosting to the back of a cookie and sandwich with another.

Scare your boyfriend with your magical psychic cookie making abilities.
